1 cup dates
1 cup oats, Whole and gluten free
1/2 cup hemp seeds
1/2 cup almond butter (natural- no sugar or oil added)
1/4 cup unsweetened shredded coconut (optional)
1/4 cup honey (local is best)
2 tbsp cocoa powder, unsweetened
1/4 cup cocoa nibs
1/4 cup pumpkin seeds
1/4 cup nuts of choice (I like walnuts and almonds)
1/4 cup dried blueberries or cherries (optional)
2 Tbsp sesame seeds
Pinch sea salt
Using a small ice cream, or melon scoop, or a tablespoon, scoop up a heaping tablespoon on mix. Place in hand and roll into a firm ball. Place on parchment lined container. Seal and refrigerate for more lasting energy balls.
