I am sure you have heard, but… breakfast is the most important meal of the day. The main reason I hear people give for skipping breakfast is that they do not have enough time. Another reason I hear is that they are not hungry. Well… here is a solution to both. My grab and go, packable Raw and Hearty Oatmeal Breakfast Bites. Oatmeal is full of fiber, protein, iron, B6, potassium and more. Oatmeal can help lower cholesterol as well as high blood pressure and it can lower risk for Type 2 Diabetes. A breakfast full of protein and fiber can help with focus, energy and blood sugar stability- so it is one of my Top 5 Fuel sources for brain and body! I made these for my husband who is trying to lower his cholesterol and keep fueled throughout his busy morning seeing patients! This is Oatmeal using whole grain oats, not the instant, sugar laden, add water and go stuff. These Oatmeal Bites offer loads of fiber, protein, Omega 3 fatty acids and they will keep you fueled until lunch.
1 Cup Whole Oats, Gluten Free (Like Bob’s Red Mill)
1/4 cup shredded, unsweetened coconut
1/4 cup Whole Flax Seed
1/4 cup Hemp Seed
1 Tbsp Pure Maple Syrup
2 Tbsp Raw Almond Butter
1/2 of a ripe banana
pinch sea salt
OPTIONAL: 2 Tbsp Chocolate chips or dried blueberries
In a medium bowl, combine oats, seeds, coconut and pinch of salt. Stir to mix. Add the maple syrup, almond butter and banana. Mash the banana into oat mixture and stir well. Add in chocolate chips or dried blueberries and stir to combine.
Using a small ice cream scooper, scoop out a golf ball sized bit of the mixture, forming a dome or ball, and place on a parchment lined cookie sheet or container. This should make about a dozen raw cookie like bites. Arrange on a parchment lined sheet or container and place in refrigerator to bind and solidify. Keep refrigerated if you want them to last 4-7 days. A serving is 1-2 balls, depending on your size/ age/ hunger.
These are great for breakfast with a fruit/ veggie smoothie or as an after school snack. ENJOY!
